Mandarin Orange Cake

For Cake -
- 1 box yellow cake mix (get a moist mix)
- 2/3 cup oil
- 2 eggs
- 1 (11 oz) can mandarin oranges with juice

Mix all ingredients for 2 minutes at medium speed. Pour into 3 (I only do 2) greased and floured cake pans. Bake at 350 for 20-25 min. Set out on cooling racks (inverted).

For Filling-
- 1 (19 oz) can crushed pineapple
- 1 (3.75 oz) package instant vanilla pudding
- 1 (13.5 oz) cool whip (I have substituted whipping cream & sugar)

Slightly drain pineapple and save liquid. Combine pineapple, instant pudding and cool whip. Drizzle cake layers with about 2 tablespoons pineapple juice as you layer the cake. Spread layers with filling. Frost top and sides. Refrigerate.

Ok this is like exactly what the grooms cake was at our wedding! Except we called it "million dollar cake". Soooo good!
